Recipe ideas

A number of people have asked whether we could compile/share recipes for our customers or anyone interested. The idea is that recipes should be able to be made with ingredients from a food parcel, and/or cheap to make, so that they can be made on a tight budget.

To those who submit ideas:
Recipes should be relatively simple to make with not too many difficult to obtain ingredients and should use healthy ingredients where possible; please respect copyright and credit those who have inspired you (eg ‘based on a Jamie Oliver recipe in his book xyz’)

To those who try these recipes:
Please note we cannot try/test them all; Windsorfoodshare will not be held responsible for any culinary disasters (or worse) that may occur. But they should be nutritious and relatively low cost.

  1. Moroccan stew

    Ingredients
    1 tin of tomatoes
    1 tin of chickpeas
    1 onion or tin of onions
    3 carrots or tin of carrots
    1 clove of garlic
    1 teaspoon paprika
    1 tablespoon oil
    Rice/bread

    Instructions
    Fry the onion gently in the oil. Sprinkle on the salt to stop the onions burning. Add the chopped garlic and paprika and cook until softened.
    Add the chopped carrot, tin of tomatoes and the drained and rinsed chickpeas. Add a bit of water or stock (use a stock cube) to ensure it does not dry out or burn.
    Simmer until the carrots are tender. Serve with rice or bread.

  2. Easy Tuna Pasta (makes 3-4 portions)

    Ingredients
    1 tin of tuna
    300g of any pasta (dried)
    1 tin of sweetcorn or peas
    1 tablespoon oil

    Instructions
    Cook the pasta in boiling water, follow pasta instructions – then drain.
    Heat the oil in another pan and add the tuna (you could add a small chopped onion of you have one). Fry until softened and lightly golden. Add some dried herbs if you have some.
    Add the sweetcorn/peas and the cooked pasta. Stir and serve.

    Hint – you could add dried or fresh chillies to spice it up. You could also use different vegetables or use a tin of tomatoes.

  3. Easy child friendly chilli

    Serves a family of 4 (2 adults and 2 children)

    Basic recipe
    250g beef mince (buy a bigger pack and freeze half as it works out more cost effective)
    1 tin of chopped tomatoes (I buy value as less sugar and salt added)
    2tbsp tomato purée
    1 tin of red kidney beans in chilli sauce
    Salt and pepper to season
    1tbsp oil (sunflower oil or rapeseed oil is good)
    Rice to serve

    Optional extras
    1 onion finely chopped
    1 carrot finely chopped
    Chilli flakes to taste (this will make it hotter so not so child friendly)

    Method (for the chilli, it takes roughly 20/25 mins to make so look at your rice instructions and cook accordingly)
    1. Add the oil to a pan on medium heat. Add the onion and carrot if using and cook for a few mins until soft.
    2. Add the mince and brown. When the mince is brown drain off the excess oil.
    3. Add the tomato purée and cook for a couple of minutes, followed by both the tinned tomatoes and red kidney beans in chilli sauce. Stir and cook until it’s thickened up and piping hot.
    4. Season to taste and add your chilli flakes if using them.

    Extra notes.. Forget the red kidney beans, add some mixed herbs (1tsp) and serve with pasta for an easy and quick bolognaise.
